Easiest pumpkin bread ever

One can of pumpkin, one can of cake mix


Pour bag of cake mix into a mixing bowl.


Add a can of pumpkin.


Grab a container of cinnamon


Add a pinch





Mix it all together


Put it in a loaf pan coated with cooking spray


Bake at 375 degrees for 40-50 minutes.
Seriously, it's so simple it makes me tear up a little.  I did include pictures for those who are culinarily (is that a word I just made up?) challenged.  Here's the recipe in a nutshell:

1 box of white or yellow cake mix (15 oz)
1 can of pumpkin (15 oz)
1 pinch of cinnamon

Pour the cake mix in a bowl.  Pour the pumpkin on top of it.  Pinch some cinnamon in there.  Mix them.  Pour in a greased loaf pan.  Bake at 375 degrees for 40-50 minutes.

If you want to make it even easier, buy a spice cake mix and omit the cinnamon.  You could probably also make muffins out of it.

Easy peasy.

I hate you, but I also love you. I can't eat sugar. I thought my sugar-free whole wheat pumpkin muffins were delicious, and now I realize that they probably weren't. That said, I'm going to use this recipe to make pumpkin muffins for my Thanksgiving banquet at work. Faster, easier, and I don't have to use my (expensive) whole-wheat flour.

Also, about how many muffins do you think this would make? A dozen? Two dozen?
